Some things are best fast and spicy.. Shrimp Arrabbiata is one of those things! A simple quick week night fix:) We sautéed shrimp in Olive oil and set it aside. Next we browned shallots, two cloves of garlic, two tablespoons of tomato paste and added a can of San Mariano crushes tomatoes. Next we add a good dash or two of crushed red pepper, sea salt and pepper. Then we make sure we take a taste test.. And added a dash of sugar to mellow out the pepper. Then we threw in 3-5 fresh basil leaves. We made three cups of whole wheat couscous and added the shrimp to the spicy sauce and spooned it over the couscous ! If you want to fire it up even more, add a small chili. A perfect weeknight light meal and god for the body too! Lean protein, whole grains, lycopene.. Mangia!!!
